"sorry, we cannot do this, it is out of scope" is correct and still lands like a slammed door. the client hears a no and nothing after it.
acknowledge, limit, open a door
- acknowledge what they want.
- limit: say plainly what is not included.
- open a door: a quote, a later date, a smaller version.
